Big D is at it again. Wanting to bake. So, I’m going with it. One of the best things my own sweet Mama did for me was to teach me to cook and give me the independence in which to do it.
He craves independence just like I did. I couldn’t wait to be on my own. I wasn’t the least bit afraid of moving out of home to go to college or traveling across the world by myself. In fact, I preferred it that way, since I could do what I wanted, when I wanted.
I see so much of myself in Big D, including some of the not-so-wonderful bits unfortunately (I’m looking at you, quick temper). He wants so desperately to be given free reign and letting him cook by himself is such an easy way to do that.
He is so proud of his accomplishment and so am I.
Yesterday he made these Flourless Peanut Butter Banana Muffins from The Detoxinista. He wanted to make something different from before, so we looked through some recipes I had saved on Pinterest. As I’ve said before, The Detoxinista chick has brilliant healthy recipes on her blog. I haven’t been disappointed yet.
We are not gluten-free, but with so many people who are, it’s always nice to have some good GF recipes in my pocket. The first time I tried baking something flourless was these flourless peanut butter chocolate chip cookies. I basically made them out of pure curiosity. I just could not believe they would actually make something that resembled a cookie rather than a gloppy mess. I mean, how could they? There is no flour! But they did and were really good! I’m still amazed by it.
Well, these muffins didn’t disappoint either. Fluffy and light with just a hint of peanut butter flavor. Very nice. And they turned out perfect. So, if a 9-year-old can make them….
